Folded Zucchini is a delicious, fun and low carb way to create a great meal, it is simple to prepare and endlessly versatile. It is an excellent option for a light yet satisfying weeknight dinner or served as a course for a dinner with friends.
- 1 clove garlic;
- 1 onion;
- 1 tsp of olive oil;
- 1 large zucchini or courgette;
- 300 gram of turkey mince ;
- 1/2 bunch of basil;
- 1 package of mozzarella;
- salt, pepper.
Preheat the pan, pour 1 tsp of olive oil. Add fine chopped garlic and onion, than turkey mince, salt and pepper. Don’t overcook, the mass has to stay juicy. When nearly ready add chopped basil and stir well.
Cut zucchini or courgette into thin slices, 4 slices for one bite, line up like instructed in video, stuff with prepared turkey mince, add mozzarella and fold it. Place ready pieces on baking tray and send to oven (preheated 180 C) for 20 minutes.
